Who doesn’t love fresh homemade bread? This apple bread was so amazing and is really pretty quick and easy. I mostly followed a recipe from my Better Homes and Gardens cookbook that substitutes apple for zucchini. Some of my sugar was gingered. I made candied ginger a few weeks ago and the sugar that drips off when it cools is ginger flavored, such a fun addition to this recipe.

Apple Bread Recipe
This recipe makes two loaves. Pre-heat oven to 350° F
3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
2 beaten eggs
2 cups sugar
3 cups peeled, shredded apple
1/2 cup cooking oil
1. Grease 2 loaf pans and preheat the oven to 350°F. Combine flour, cinnamon, baking soda, salt, baking powder and nutmeg in a medium size mixing bowl.
2. Mix together beaten eggs, oil, sugar and apple in a larger bowl. Stir in dry ingredients all at once until all flour is mixed in.
3. Split the mixture as evenly as possible between the two loaf pans and bake for 50-55 minutes or until a toothpick inserted in the center of the loaf comes out clean.
I think that muffins would be fun as well. You could cut the recipe in half but I like to make an extra to throw in the freezer any time I am baking. Give this recipe a try and let me know what you think. I love making quick breads, breads that don’t require yeast and rising times, and they are much more forgiving. You can mess with the recipes a bit and still get bread. You can add nuts or dried fruits if you like a heartier texture. You can also play with the spices. With so many apples this fall, I am trying all kinds of apple recipes and this was my favorite new one so far. I hope you enjoy it.
